Menu Plan Monday 4/13



Who knew we would have this many leftovers from last week? Looks like it's Lefover-fest at our house this week! Fortunately we didn't cook the ham this year, so we don't have a million pounds of it left over. Here's the plan for this week:


Monday - Leftover Chicken Spaghetti (recipe HERE) with salads

Tuesday - Leftover Potato Soup

Wednesday - Quesadillas (directions below) with Spanish Rice (from a mix)

Thursday - Canned soup and grilled cheese sandwiches

Friday - Homemade Pizza

Saturday - Chicken Cacciatore with salads

Sunday - Fettucini Alfredo (recipe HERE) with green beans


We made really easy quesadillas! First, mix some refried beans with salsa. There's no specific measuring. Just add a little of both so that it's still pretty thick. Spray one side of a flour tortilla with olive oil cooking spray (which browns better than canola spray). Lay the sprayed side down in a heated skillet. Add some shredded cheddar, refried beans/salsa mixture, and a bit more shredded cheddar. (The cheddar acts like glue to hold both sides together.) Heat until browned, flip, and heat until browned. I cut them with a pizza cutter, and we can dip them in additional salsa or sour cream. They're a big hit around here!
