Menu Plan Monday 5/11


We'll be traveling home from my mother-in-law's house today, so unpacking and getting life back together will be at the top of the to-do list. I intentionally planned ahead for a simple dinner tonight. After that, we're back on track! Here's what's on the menu for this week:

Monday
Grilled Cheese Sandwiches & Soup (pantry/fridge meal after travel)

Tuesday
Crock Pot Teriyaki Pork Roast (recipe HERE)
Steamed Rice
Some type of veggie from the freezer
* I'm back to work today after being away from home for 3 days, so we're keeping this one simple too... helps me stay sane!

Wednesday
Chicken on the grill!
Pasta salad with double veggies

Thursday
Oven-Baked Fish (coated with crushed crackers, parmesan cheese, Italian seasoning, and salt)
Leftover pasta salad from last night
Green beans

Friday
Homemade Pizza

Saturday
We're celebrating Mother's Day with my mom! She requested my hubby's grilled chicken. We'll probably have oven fries or baked yams along with a salad. I still have to find out what she wants for dessert, so I don't have that ready for you quite yet. Maybe we'll do the killer chocolate cake (HERE) topped with vanilla ice cream and chocolate syrup. That's a big celebration favorite around here.
