Menu Plan Monday - Week of 7/19


I'm working an extra day again this week, so there's nothing fancy on the menu. If I can keep it simple, then I'm more likely to actually make what I planned!

Monday (working day)
Leftover BBQ Chicken
Leftover Pasta Salad
A side of veggies & dip
We had my parents over for dinner Sunday evening, so that changed last week's plan a little bit. Now we have enough leftover chicken for another meal! Yay!

Tuesday (working day)
Black Bean Taco Salad (Recipe HERE)
This is what was on the menu for last Saturday, and we ended up eating leftovers instead. I hate to make something new if there's already perfectly good food in the fridge!

Wednesday (off day)
Baked Fish
Oven Fries
Green Beans

Thursday (work day)
Crock Pot Chicken of some type
Yams
I have some cream of mushroom soup, BBQ sauce, and other possible seasonings for the chicken. We'll see what we feel like the night before, and that's what will end up in the crock pot!

Friday (work day)
Homemade Pizza
I have more pitas in the freezer just in case I'm running late getting home. If there's time, I'd like to do homemade crust too.

Saturday
Pork Roast from the Freezer (previously cooked)
Baked Potatoes
Some type of canned or frozen veggies

Sunday
Unknown - My brother and sister-in-law may be visiting, so that will drive the menu. I do plan to do the cooking, but I don't know how long they're planning to stay.

I also have a few cans of soup in the pantry and some already-cooked ground beef in the freezer. Add a quick jar of pasta sauce (which I have in the pantry), and I have two possible meal substitutions if things get too crazy this week.

IT all sounds good to me- my new favorite way to make chicken in the crockpot is rotisserie style.

I love crockpot chicken! I made a good one once with the main sauce being Italian dressing :)

We love crockpot. I tend to use lots of cream soups, mushroom, celery, chicken etc.
