We're doing a last-minute, short road trip for my work Monday and Tuesday, so I don't exactly have to menu plan for those two days this week. Jason & Emma get to come with me, and we're staying with my brother and sister-in-law. AND it's my brother's birthday on Monday! So it's going to be a fun start to the week!
I snagged a free pack of pre-seasoned Jennie-O turkey tenderloins at Kroger last week (HERE). Those are going to come in VERY handy for this week's menu plan! Here's the plan for this week.
Monday & Tuesday
Road Trip!
Wednesday
Turkey Tenderloin
This is already seasoned. I like to broil it in my toaster/convection oven. I'm careful to use a meat thermometer to make sure that the internal temperature is hot enough. I wouldn't recommend this cooking method if your toaster oven is older or small.
Noodle mix
Fresh green beans
Thursday
It's our 15 year anniversary... Wow!
I'm not exactly sure what our plans are for this evening. We may go out. We may grill steaks at home. We'll see what the day holds when it arrives! I'm not working this day, so we could make a quick run to the store for dinner items if necessary.
Friday
Leftover Turkey Tenderloin
Seasoned Potato Cubes - Toss with salt, parsley, garlic, canola oil and bake or microwave.
Corn
Saturday
If there's turkey left over, we'll be using it for salads this night. There's usually enough for three meals when we cook a pack of the Jennie-O tenderloins.
Sunday
Chicken 'n Noodles
Salads
We had a rotisserie chicken last Friday. When we were done with that meal, I removed the rest of the meat from the bones and froze it. We should be able to get two more meals out of it.
