Whew! It's been quite a fun and busy weekend around here. Thanks for being patient as I've been pretty quiet with my posting. I've been enjoying the company of my cousin from Virginia, so I've not spent much time blogging.
I've also not spent much time planning meals for the coming week. So I'm going to do a fly-by-the-seat-of-my-pants menu plan! I do have a fairly well-stocked fridge, freezer, and cupboard, so I know that I have the makings of some great dinners.
How do I do a fly-by-the-seat-of-my-pants menu plan? I still know that planning is the key. I can't just walk into the kitchen at 5:00 and expect some lovely meal to jump out of the cupboard. When I try to do this, I find that the meat is still frozen and the pasta is uncooked. Instead, my plan is to take stock each evening and see what sounds good (and easy!) for the next night. That gives me time to thaw, marinate, prepare a Crock Pot, or do whatever steps I need to complete to make sure that we have a yummy, nutritious meal on the table the next day.
I'll keep you posted throughout the week and let you know what kinds of meals we come up with!

Oh, I have lots of pantry recipes (I collect recipes). My husbands favorite is Tostadas or Chalupas. Open a bag of tortilla chips or fullsize chalupas, spread refried beans over them, top them with salsa n cheese and ur done! Most of the time I have some leftover ground beef and lettuce in the fridge, so I top it with that.
Another one is a onepot wonder; canned corn, tomato, carrots, greenbeans in a boiling bot. top with leftover beef, ur done

I picked up an awesome recipe from another MPM poster. If you use dried basil or have an herb garden (I have basil in a pot, because I use it so much), then its a perfect pantry meal!
From the Pantry Red Clam Sauce
1/4 c. olive oil
1/2 c. butter
1/4 c. parsley flakes
1 T sweet basil
3 T Parmesan Cheese
1 can tomato paste
6 cloves of garlic
1-2 cans minced clams
Warm together olive oil and butter until melted and combined. Add garlic, parsley, basil, parmesan cheese, red and black pepper to taste bring to boil. Add clams with liquid and stir in tomato paste until well combined. Bring to boil. Serve over hot linguini.
