Berry Delicious Pancakes

Emma is currently hungry for pancakes almost every morning. While I don't make them for her every morning, I do like to make them once in a while. Breakfast is a time when we get lots of whole grains, and I don't want pancakes to get in the way of that! So I've adapted a favorite pancake recipe to make it healthier and more filling.

Berry Delicious Pancakes
1 c. all-purpose flour
1 c. whole wheat flour
2 T. baking powder
1 t. salt
1/2 c. Egg Beaters (I use the Kroger brand.)
You can substitute 2 eggs for the Egg Beaters.
1 1/4 c. skim milk (possibly a bit more)
1/4 c. canola oil
1 c. fresh or frozen berries (defrosted and drained)

Mix the dry ingredients.
Then add everything else except the berries.
GENTLY stir in the berries.
You may need to add another splash of milk. It just depends on how much liquid was added with your berries.

We've been making these with frozen mixed berries, and they are VERY filling! I'll have to take a picture for you the next time I make them. They're a pretty shade of purple-blue. And I have one very happy little lady when I make them!

These sound delicious! I was raised on 100% whole wheat pancakes, and I always *loved* it when I got white pancakes for whatever reason. These seem like a good compromise.
