Country Bean Soup

My mom kindly shared some ham with me after our Christmas meal. My first thought was to make some bean soup with it. (Maybe it was the overabundance of cookies that was urging me to make something healthy??) Here's my favorite bean soup recipe. I think I like it so much because of all the different spices that are in it.

Country Bean Soup

1 bag of 15-bean soup mix beans (rinsed, soaked overnight, and rinsed again)
3/4 lb. of ham (or however much you have on hand!) cut into small pieces
1/2 c. chopped onion (I use frozen.)
1 tsp. oregano
1 tsp. salt
1/2 tsp. ground ginger
1/2 tsp. basil
1/4 tsp. cumin
1/2 tsp. pepper
6 cups water

Place all ingredients in your Crock Pot, and cook on low for 8-10 hours. I like to put it on high for a couple of hours and then switch it to low. Shortly before eating, add the following:

2 cups skim milk
2 T. butter

Stir until the mixture is heated through and the butter is melted. Season with additional salt and pepper to taste.

We usually eat this with cornbread or beer bread. It makes the whole house smell SO good!!
