I did a little searching for crock pot recipes for this week. I found what I was looking for! Here's what's on the menu this week.
Monday
Homemade Pizza

Grilled Chicken
Grilled Peppers with Provalone Cheese
Grilled Mushrooms
Crock Pot Baked Potatoes (Recipe HERE)
Friday
Leftover Grilled Chicken
Leftover Crock Pot Baked Potatoes
Green Beans
Saturday
We're going to a kickoff dinner for my daughter's school. So we'll be taking a covered dish. I'm thinking about taking my black bean dip and some chips. (Recipe below)
Sunday
Chicken 'n Noodles (which we didn't get to last week)
* I had previously deboned and frozen the remainder of a rotisserie chicken. Now we'll be able to thaw and use it for another meal.
Salads
Black Bean Dip
2 cans black beans, rinsed and drained
1 can diced tomatoes
1 can corn, drained
3 chopped green onions
I mix all of this together and let it sit in the fridge for a few hours. You can also add cilantro (I'm not a fan) or other seasonings. I'm pretty Plain Jane with this dip! We dip it with Baked Tostitos. Yum!
