Menu Plan Monday - Week of 8/24


It's officially back-to-school week here. My daughter is in preschool, so she only goes three mornings each week, but that does change the routine around our house. I'm also working three days this week. I'm still trying to plan cook-free, crockpot, or really quick meals for the days that I work. That way we're not rushed when I get home. Here's what's on the menu this week.

Monday
Grilled Chicken Salads (made with leftover chicken we grilled last week)

Tuesday
Chicken Cacciatore with Mushrooms
Salads

Wednesday
BBQ Pork over Homemade Bread (Pork recipe below)
Sweet Corn

Leftover Pork and Homemade Bread

Homemade Pizza

Saturday
Party Day! We're having a pre-baby party for my brother and sister-in-law. We can't call it a "shower," because it's co-ed. It's kind of like a birthday party, but the guest of honor hasn't quite arrived yet.

Sunday
Baked Fish & Rice with Broccoli (Recipe HERE)

I knew that I wanted to have fish on Sunday, but I wanted to try something different. In order to avoid butter and oil, I used the Advanced Search feature on Allrecipes.com. You can find directions for this feature HERE. It's a great way to find what you want and avoid what you don't want!


BBQ Pork

Pork Roast
BBQ Sauce
Orange Juice

I simply place a pork loin roast in my crock pot. I cover it with BBQ sauce, using about a bottle for a 2-3 pound roast, and add a splash of orange juice. I let it cook on low for about 10 hours. Then I shred the meat right into the sauce, adding more sauce if needed. These are SO easy and SO yummy!
