Fly-By-The-Seat-of-My-Pants Menu Plan Update

Well, it's day two of the no-plan menu plan. If you missed my Menu Plan Monday post this week, let me explain. My cousin was visiting this weekend. We had a ball, and we were exhausted by the time the weekend was over! So I didn't do a menu plan. Instead, I'm using what's on-hand to cook this week. I did swing by Kroger last night for milk and free aluminum foil. I ended up spending $2.09 for a gallon of milk, two packs of pita breads, and a 50 ft. aluminum foil. The foil was free with a coupon I had.


I'm thinking that might be it for grocery shopping this week. I may go Friday to pick up everything for next week, but we're pretty well-stocked right now.

We did splurge and eat dinner at Panera Monday evening. We had some errands to run, and I really didn't feel like cooking. I could blame that on my lack of planning, but I know that I wouldn't have felt like cooking even if I did have a plan! So that was our pamper Mommy moment for the week! (The good news is that I ate my soup for dinner and saved my sandwich for today's lunch.... two meals from one!)

Tonight we used one package of the pitas shown above to make pita pizzas. Top, bake at 350 for about 15 minutes, and VOILA! It's pizza! Emma thought it was great, because the pieces were Emma-sized when we cut them in fourths.

I'm working again tomorrow, so I'm thinking that it's the perfect night to defrost the soup that's in the freezer. Then I don't have to cook at all... just reheat!

That's the plan so far. The goal = no more eating out this week!

Way to go. I wish the "no more eating out this week" worked for my family. It's my hubby that usually chooses. Pita bread, love it, but only buy when there's a coupon or super sale! I need to get use to freezing also. FREE foil? I paid $2.15 :p

The free foil was kind of a surprise for me. I had submitted the rebate form when Reynolds launched their new 100% recycled foil on Earth Day. Unfortunately, I submitted it with a PO Box (which is my only option considering the fact that we don't have mail delivery here). They sent me a letter saying that they couldn't accept anything going to a PO Box, and the deadline to resubmit had passed. I was bummed! But a few weeks later, I got a letter from them. It said that they had changed their policy! Yay! They enclosed my rebate check AND a coupon for another free roll. You can't beat that! :)
