Menu Plan Monday - Week of 3/21


Can I tell what a dinner disaster last week was? Did you happen to notice that I didn't post a menu plan for the week? Is there possibly a connection between having no plan and having a dinner disaster?

Yep.

Fortunately, I had frozen some cooked, diced chicken. Fortunately, my family likes pizza enough to have it twice. Fortunately, we made it through the week with only one meal out, and that meal was sort of planned because we knew our schedule would be hectic that day.

But I have to tell you how incredibly stressful it was to not know exactly what I wanted to make for dinner each night. The good news is that last week's experience made me get on the ball and get this week's menu planned. Here's what I'm planning.

Sunday
Rotisserie Chicken
Baked Yams
Green Beans

Monday
Crock Pot Sweet Beans
Homemade Bread

Tuesday
Broiled Tilapia Parmesan
Baked Sweet Potatoes
Green Beans

Wednesday
Leftover Beans & Bread

Thursday
Crock Pot Chili
Cornbread (Using a freezer mix!)

Friday
Leftover Chili

Saturday
Homemade Pizza


Hmm... Sounds like a lot of beans this week, but for some reason that's just what sounds good to me as I sit down to plan. If we get tired of beans, I do still have some cooked chicken in the freezer. So I could always make something different with that. But at least I have a plan!

Lots of beans don't sound so bad at my house! They're healthy, cheap and tasty. I intentionally plan at least two bean meals a week to stretch our budget.

I am LOST without a menu plan! I have saved the recipe for the broiled parmesan tilapia. It sounds DELISH!

I have a problem of making a menu but not following it. However, this week I have followed my entire menu!
